Yet, after the experience lived at Tosca Restaurant ofHotel Splendide Royal Paris, it becomes natural to embrace it. Because here too, a conscious choice is made: to embrace a cuisine that, while rooted in Italian identity, communicates uncompromisingly with Paris, finding a rare balance between fidelity to tradition and personal interpretation.
At the helm of the kitchen, with significant experience behind him despite his young age, is the chef Paolo Ambrogio who He creates a generous and intense menu, built on top-quality seasonal ingredients and a deep understanding of classic recipes. His interpretation respects tradition without rigidifying it. References to popular Italian cuisine emerge naturally, while classic techniques are lightened and reinterpreted with a contemporary sensibility. The dishes express clean and decisive flavors, never overpowering, and are equally suited to a casual lunch or a more sophisticated dinner.
A lunch, as the Led by Maître de Maison Benoit Saudemont, Tosca restaurant offers convivial and inspired cuisine, with a seasonal menu that highlights the great pillars of Italian gastronomy.

An ideal setting for business guests seeking a blend of pace and pleasure, work and sharing, in a discreet and refined atmosphere. At dinner, however, the experience becomes more structured and elegant.
The service complements a more complex menu, supported by an exclusively Italian wine list—a bold choice consistent with the Parisian setting. Grilled dishes, a new signature of the restaurant, add depth and character to a menu that emphasizes elegance without being ostentatious.
The tasting menu was a real pleasure, as I recognized the various ingredients that blended beautifully together in the various dishes. I'd like to mention a couple that will remain a vivid memory for a long time: the Mugellana ravioli (filled with an ethereal, sweetly buttery potato puree) with octopus ragù, the tenderness of which I can still taste; and the grilled pigeon, artichokes, parsnip, and wild berries with herbs, a rare dish for its cooking and balance of flavors.
Heartfelt applause goes not only to chef Paolo, but also to the very young “patissier” Théo Thomas, who sweetened the palate with a convincing “Come un Mont-Blanc,” and to the attentive, professional, and above all friendly service of Antonella, Diana, and Aissatou Diouf.
