A collection that interprets the Bolognese hills

The new vintage is the result of balanced weather patterns, characterized by spring rains and mild temperatures. According to agronomist Aleandro Ottanelli, these conditions favored an orderly ripening of the olives, producing fresh oils with a distinct aromatic signature. The six labels include four monocultivar varieties— Pandesco Bio, Brisighella DOP, Vargnano e Stiffonte — and two Multivarietals, Cabianca Bio e Lafonte.

The most anticipated point of the presentation was the debut of Aurum, a rare selection obtained exclusively from olives harvested from centuries-old trees. The batch, processed separately and chosen for its freshness and longevity, concentrates the agronomic heritage of the Bolognese hills in just a few drops. According to the company, Aurum represents a seal of quality for the 2025/2026 olive oil campaign.

The Agrivar project: 700 hectares of olive groves, vineyards, and biodiversity

Agrivar, the agricultural company of Palace of Varignana, was founded in 2015 with the aim of enhancing the local area through a circular model that combines agronomy and hospitality. Today, it boasts 700 hectares of cultivated land and 265 hectares of olive groves—the largest in Emilia-Romagna—with over 195.000 trees. Among these, historic varieties such as Nostrana di Brisighella have been recovered and revitalized thanks to sustainable techniques.

Cabianca Bio

Multivarietal with medium fruitiness, with hints of wild herbs and a balanced taste structure between bitterness and spiciness.
